What’s Cooking Today

Ok, there's enough actual and budding chefs in the Ward B, that I'll see if a cooking thread can fly. We all like to share ideas, so let's share what we're grilling, cooking and yes, even baking each day and weekend, too.

We're having breakfast for supper tonight. Fried ham and a Gruyere and Brussels sprouts frittata, and some home fries.

So apparently pot pizza is a thing! I had pot brownies back in college, ages ago, and they were gross. Can't even imagine why someone would want to ruin the 5th food group like this!

It's as if no one ever taught these youngins proper etiquette - buzz first, THEN eat.

Okay, so I had to read this 3x before I actually got it. I thought you were referring to a way of cooking (in a pot), rather than an ingredient. lol

Because.....yes....your olive bread recipe I made this past weekend was cooked 'in a pot'. My first attempt was not great (in large part I'm thinking because I used the wrong kind of flour....I mean, who knew that flour type was so important!), but I will try again. Visually, it was a no go, but it tasted good. :-)

I pan seared some salmon for us earlier this week.

Tonight might be pizza, since it is #PizzaFriday after all.

One of our daughters is coming over tomorrow so I can help her with her resume. So we’ll likely make something fun tomorrow.

I made crock pot roast beef yesterday. Served it with mashed potatoes, roasted grape tomatoes, and au jus. I'm not sure what tonight will be, maybe salmon.

Got lazy yesterday & we just thawed & heated up some leftovers of my Mrs’ awesome lasagna. Not that I’m complaining, mind ya! Love her lasagna!!!!!!

Chicken here too last night. I seared then roasted them, and put them in a creamy rice soup which we ate with some cheese and rosemary crackers.

Grilled some chicken yesterday, then added those to some curry & some rice. Not too bad.

Ended it with a couple semi-homemade ice cream sandwiches.

Today we supported our local economy - ordered thai & japanese food. Son & I watching The Witcher series from there beginning; not my wife’s cup of tea though.

I’m making my new No-Knead Mediterranean Olive Bread again. Prior times I wasn’t getting the lift that I expected, so this week I researched similar recipes, and found that I must have transcribed the original recipe wrong. I needed 1-1/4 tsp yeast, not just 1/4!! DOH!

So corrected that! First rising was amazing!!!

I wish we could attach pics to Comments & Replies, too!! That would allow us to continue an original post (like “What’s Cooking”) as a thread, as an on-going conversation over time! :-(

I know.....I have to dig so deep to find this thread! But I will follow food anywhere. lol I've noted the measurement update!

My Mrs made her Swedish Meatballs, which is a family favorite.

Yesterday I made what we call “pork bites” - fork-sized chunks of pork, coated in seasoned flour & pan fried. Usually we serve this with rice & veggies. But we had leftover homemade flour-&-corn tortillas (a speciality of grandmother of a friend of @ChinaDan), so we made “pork bites tacos” instead.

Happy National Cheese Day! And I was totally not prepared, so I have to do the best I can with what I have. I'm going to make a shepherd's pie topped with horseradish cheddar.

We had several cheeses at the ready, but we ended up not having them for some reason. So I’ll have to pull them out this weekend.

We’ve been eating leftover Giordanos’s deep dish pizza... well, I have. Mrs had a salad 2nd day to cut carbs. Waste not want not, ya know, especially since I’m back working again. Naps apparently are frowned upon.

LOL There have been incidents of co worker napping in my office. Pretty humorous. :-)

Last night I didn't feel like cooking, so I made a salad of thinly sliced kohlrabi and radish dressed with EVOO and white wine vinegar and a bit of dry hot mustard. Topped it with a lot of blue cheese. I did make a lot bacon, but that's not really cooking. :-) Tonight it will be the ricotta stuffed mushrooms.

      I’ve never had kohlrabi.

Mrs & I agree, making bacon isn’t cooking! Although the cleanup afterwards sux! So she makes 2 batches at a time, and freezes the rest. Recrisps nicely, or can toss some into an omelette or whatever.

Mrs & I experimenting with various chorizo into our recipes. Best so far is cooking it into her crispy breakfast potatoes, & serving it with over easy eggs & hot tortillas!

Love, love, LOVE chorizo! Especially the Spanish ones with lots of paprika. I'm going to have to remember to try them in fried potatoes!

Last night we had leftover leg of lamb (which I made previously with roasted potatoes and roasted tomatoes and haricot verts) and parmesan couscous and more roasted tomatoes.

Tonight I'm trying a new recipe--ricotta stuffed portobello mushrooms.

So how did the ‘shrooms taste?

They actually got sidelined, because we got free takeout from one of the chefs we have been trying to keep afloat during "no dine in" time.

Yesterday we made corned beef and cabbage in the crock pot, and boiled potatoes. We didn’t get to have this treat on St.Patrick’s Day, as is our family’s custom. Yummy!!

    Thanks for the recipe, Mark!

Last night I made Moroccan salmon and veggies in the tagine.

Tonight it's going to be loaded baked potatoes, with mustard pulled pork.

Yummy! My wife & I started making an apple pie last night, & realized we didn’t have enough apples. So we made an ad hoc Apple & Peach Crumble Pie instead. Turned out delicious; we’re adding this one to our Family Recipe Book!

My wife made a new version of pasta salad for us, that’s pretty darn good.

I found a new recipe, No-Knead Overnight Mediterranean Olive Bread. First batch of 2 loaves I exploded a Pyrex baking dish. But saved 2nd loaf.

My wife liked it so much she asked me to make it again, which Indid yesterday. She says it’s the best bread I’ve ever made!

    Be safe!

@CitizenGrace, I can’t attach a pic of recipe in Comments or Replies. So I’ll have to send it to you privately.
