Smoked: Espinosa Knuckle Sandwich

Espinosa Knuckle Sandwich is the latest trick in Guy Fiere’s arsenal of marketing warfare. I’ve been a fan ever since Guy featured one of my favorite restaurants in Cincinnati’s Over-The-Rhine neighborhood on Diners Drive-Ins & Dives. He gets into making cigars. He gets AJ Fernandez and Erik Espinosa involved. Guy does have some clout. AJ, Erik & Guy – sounds like a 60s folk trio.

Flavor profile: Wood, cashews, pepper, spice and a sweetness (I’m tasting pastry like a bear claw) mixed with the spice, but the wood and pepper are the dominant flavors. Coffee and milk chocolate notes interrupt from puff to puff. There’s even a hint of floral and citrus during the second third.

Pretty good construction – the draw was a bit loose initially, but tightened up by the second third, not one touchup needed, straight even burn line throughout, flaky grey ash and decent smoke production.

The Espinosa Knuckle Sandwich is a wood and pepper bomb. What do you expect from a culinary artist? When in doubt, add more pepper…or More Cowbell. Hey, Guy has a little Christopher Walken vibe in his act.
