What’s Cooking Today

Ok, there's enough actual and budding chefs in the Ward B, that I'll see if a cooking thread can fly. We all like to share ideas, so let's share what we're grilling, cooking and yes, even baking each day and weekend, too.

Made back to back ramp pizzas on Friday and Saturday nights. Friday's pizza was good, but I perfected the recipe and Saturday's was even better. Homemade crust, local pizza sauce, shredded mozzarella, onions, mushrooms, local sausage, fresh mozzarella, half a dozen ramps, and topped with parmesan. Yummmmm-o.

It's the weekend, which means we order take out to keep supporting our favorite local restaurants. Not sure what it will be, only that I won't be cooking!

Yesterday, I had a tea party for me, myself, and I. lol I made a cucumber and butter sandwich and some chocolate rosemary cookies. I also got take out from one of my favorite bakeries--a half dozen scones, and some turnovers, so I put one scone on my tea tray with strawberry jam and clotted cream, and cooked a ham, brie, and fig turnover. I had a scoop of lavender and honey ice cream for dessert and Harney and Sons Paris tea. Oh, an a cordial glass of Creme de Violette.

    Food is my salve. lol

I made chicken and dumplings on Thursday night and last night I picked up Turkish take out (consisting of chicken kebab and adana kebab and the accompanying salads and pita). Not sure what tonight will be, but breakfast this morning was good--mocha cheesecake and espresso!

      LOL!! Cheesecake for breakfast!

My wife did similar yesterday... her brownie experiment.

She riffed on my habit of upgrading boxed brownie mixes with chopped up chocolate bars, nuts, fruit or whatever looks good in our pantry. She had a roll of Rolos, so she embedded them into the brownies, and topped it all with chopped walnuts. Chocolate & carmel melted & merged together into a gooey wonderfulness that is amazing warm with ice cream!

Mrs & I have been cooking up a storm together! Some we love to do with & for each other!

She discovered that she really likes my spinach & mushroom omelettes.

For Easter she made a new kind of sour cream cheesecake that was amazing!

Tomorrow we’re going to make her Sunday Gravy (red sauce or spaghetti sauce to most non-Italians).

I can't remember what I cooked last. The past 2 nights have been take out--Friday night was Indian food, tandoori chicken and lamb, garlic naan, and papadum. Saturday night was burgers and fries (lamb burger for hubby and portabello burger for me). I think tonight we'll take out some Japanese bento boxes.

Tomorrow I have chicken planned, with some Parmesan couscous and roasted sweet peppers.

What's everyone's Easter dinner going to be?

This is the first time in 8 years that I haven't been able to go out for a fabulous Easter brunch or dinner with family/friends.

I don't think I've ever made Easter dinner myself before. So it's going to be an applewood smoked carver ham, swiss and parmesan scalloped potatoes (it's the only cheese I have in the fridge at the moment), and roasted broccoli. Cherry tart for dessert.

We're depleting our frozen butcher meat. Looks like we will have to venture there again in the next week.

Tonight will be baked pork chops, baked potatoes, and roasted zucchini.

Mrs breaking out the cookbook to try new recipes!

Had spicy turkey burgers Monday, & I made her bread pudding (her fav!).

Yesterday we made lemon pepper chicken with stuffing. And a nightcap to Bourbon Cream.

And today she’s making beef stroganoff!

Tonight's menu is Mediterranean lamb burgers on top of couscous on top of a mix of kale, spinach, and chard. Crumbled feta on top of all that.

Tonight is homemade vegetable beef soup with some Manchego cheese and sprouted spelt bread.

We have friends/family who make large batches of soup and share. The last two donations have been a drive by and drop off. This one we picked up off the porch of my mother-in-law!

Trying to use up some food I have in the cupboards and freezer, so I think tonight will be creamy mushroom tortellini, bison meatballs, and some arugula and spinach.

    My sister sent a meme:

This long-term shelter-in-place situation is turning into Chopped!! You’ve got peanut butter, tri-color pasta, radishes, an orange and hotdogs. What’s for dinner?!!

    • Member Avatar og

      LOL Ugh!! Well....

Appetizer--One hot dog, sliced into 1 inch rounds and pan fried, with the fat/grease reserved. Served individually, with a toothpick.

Entree--Boiled pasta, tossed with whatever fat remains from the hotdog bite appetizers. Sliced radishes with some fresh squeezed orange juice.

      Dessert--Peanut butter on a spoon.

      Nice CG!

Spices are usually allowed, too. So I was thinking a ramen-like dinner, using the pasta, sliced radishes, then mix some spices & peanut butter with pasta water to make the sauce. Then slice & sauté the hotdogs & serve those on top. And the orange slices as dessert.

Tonight I'm going to make a seafood and chorizo paella. The last one I made we cooked in the back yard, but this one will have to be done in the oven.

I haven’t tried to make a paella yet. Do you really need the special pan, or can a good cast iron skillet work?

    • Member Avatar og

I can't reply to your reply, so I hope you see this!

You don't really need a special pan, although I have a small one and a huge one (that I use outside over fire).

You DO need special rice, though. Some recipes will call for risotto rice, but it just isn't the same as bomba rice. If you can't find it and you want to try your hand at paella, let me know and I'll get you some bomba rice!

Mrs made us her “pork bites” tonight, by request. She cubes a lean pork roast into 1-1.5” chunks, lightly flours them, & fries them up. Simple but a family favorite!! A couple baked sweet potatoes, some corn and we had a wonderful dinner!

We had take out pizza last night. For lunch I'm ordering Turkish food for take out.

Tonight I'm making stuffed chicken bre@sts, roasted potatoes, and sauteed spinach.

Yesterday Mrs & I met our daughter & son-in-law at Chik’fil’a for lunch, supporting our local businesses. We sat in our own cars, parked 6+ft away, and chatted together while we ate “together”.

They’re joining the healthcare front lines soon. So we’re constantly worried about them. It was wonderful to see them, even at a distance.

Yay, for supporting local restaurants!! We've been doing our part with take out as well.

It's nice to hear that you are adapting new protocols. We have to do what we have to do, and seeing our family however it works, is heartwarming.

    Eggplant Melanzane

    Spots Romano

My wife made her Eggplant Red Gravy two days ago. It’s a meatless red sauce & we don’t miss the meat at all.

Tonight it will be homemade borscht, which was also delivered to our doorstep by another friend!
